Editing text in a text element is almost exactly the same in Flow and Claro.
In both authoring options you select the element then select the pencil icon or simply double-click on the text element to be able to enter edit mode.
When you're finished your edits you select either another element or a blank area of the page to leave the text element. At that point the changes you made will be saved.
In this example we change the default text in two elements on the Flow page.

1Select the Title text element.
Click the continue button:

2Select the pencil icon.
Click the continue button:

3The text element will now be highlighted in a gold box and you'll see the text editing mini toolbar. You can now edit the text. Select the text element and we'll add text for you.

4Select the subtitle text element.
Click the continue button:

5Select the pencil icon.

6You can now edit the text. Select the subtitle element and we'll add in text for you.
Click the continue button:

7Select the empty area of the page to exit edit mode for the text element, which saves the text change.

8The two text fields now display the changed text.
